Grilled Oysters in the Shells
8 tablespoons butter
1 tablespoon minced garlic
1/4 cup Worcestershire sauce
2 tablespoons fresh lemon juice
2-3 teaspoons hot pepper sauce
Kosher salt
Freshly ground black pepper
24 oysters, scrubbed and rinsed
3 tablespoons rough chopped parsley
2 lemons, quartered
Preheat a gas grill on High or light a charcoal fire. Oil the grill’s cooking grates.
In a shallow baking pan, combine the butter and garlic and place the pan at the edge of the grill to melt the butter. Once melted, add the Worcestershire sauce, lemon juice, hot pepper sauce and salt and pepper to taste, stir to combine.
Place the oystrers directly on the grill and cook for 2-3 minutes. At this point you can pull them off and open with an oystrer knife, or you can leave them on the grill for another 2-3 minutes until they open completely.
Remove the oysters from the grill, pull of the top shells, and sever the bottom muscles. Sprinkle the oysters with the parsely, top them with the butter sauce and serve in their shells with lemon quarters.
